For a Coffee Shop - Investing in a good grinder is a great way to ensure that you maintain precision in grind size
Coffee is too hard a bean to be crushed and ground in a home use kitchen mixer, the burr placement and their materials go a long way to give an even grind.
Well ground coffee is crucial to make a good cup of coffee. You could have the best beans but end up with a bad cup if the coffee is not ground right.
If you make your coffee in a Moka Pot or South Indian Filter Coffee & the Decoction fails to extract well, most likely your coffee is great but the grind size is off the mark.
At Agastya Coffee, we trust the @heycafegrinders to grind the coffee as per your requirement, if you see all our coffee packs with Roasted beans it’s only to maintain freshness. Please request our staff to grind it to your preferred method of Brewing.
Storing coffee as roasted beans and grinding it based on orders, maintains freshness as ground powder exposes the oils and aromas and oxidation happens faster. Roasted beans hold the aromas for as long as 4-6 weeks over ground powder which last good for 2 -3 weeks.

![State of Rest
Resting the coffees Post Harvest (processing) is crucial for bean quality.
After the beans are processed by methods like Natural / Washed / Honey / Fermentation and dried till it reaches an optimum moisture of 11-12%, these are ready to be bagged.
Here, the bagged coffees need to Rest.
Before it gets sent out for Roasting, the coffee does better if it’s rested well.
30 - 45 days would be a good resting period. If the green beans need to age longer it can do so with good storage conditions.
Resting the coffee allows for internal microbial activity to stabilise in the bean after the post harvesting process.
Resting the beans harmonises the chemical compounds allowing for a well developed final flavour profile.
If roasted too quickly, they may result in a grassy and underdeveloped taste. Also excess chaff is seen in the roaster when beans are roasted too soon missing the ideal resting time.
Just as Rest is important for the hands that grow, pick, process and supply; coffee does better with a bit of rest post harvesting too.
